@ Ontario Food Terminal

새벽 두 시에 집을 나서 두시 반에 토론토에 있는 온타리오 청과-꽃 시장에 도챡한다.

목요일에는 온타리오 전역에서 농장과 과수원을 하는 이들이 자신들의 야채와 과일 등을 가지고 나오는 Farmers’ Market 이 열린다. 이날엔 꽃 시장까지 열려 이곳 터미널은 일주일 중 가장 바쁜 날이 된다. 전 세계 많은 나라들로부터 들여온 더욱 많은 양의 다양한 청과물들이 거대한 컨테이너에 실려 이곳애서 하역되고, 각 유통 업체들로 뿌려지고, 수많은 바이어들이 싱싱한 물건들을 좋은 값으로 제시하는 업체를 골라 구매 주문을 한다.

청과 바이어. 내 새로운 직업이다. 알아야 할 것, 배워야 할 것, 알아야 할 사람, 알아야 할 야채, 알아야 할 과일들이 너무 많아 즐거운 비명이다.

청과 유통 분야엔 이탤리언들이 많이 포진하고 있었다. 전임자에게서 소개받은 한 이탤리언 세일즈맨 할배의 이름은 마리오, 마리아의 남성형 이름으로 콧수염만 기르면 딱 수퍼 마리오 그 캐릭터 모습이었다. 각 유통 업체들에서의 내 카운터파트인 sales man 들은 온 세계에서 다 모인 듯 다양했다. 온갖 나라에서 온 다양한 악센트의 영어가 수많은 청과의 종류만큼이나 많았다. 아주 흥미롭고 다이내믹한 곳이었고, 새벽을 여는 일꾼들의 활기찬 바이브는 어느 다른 곳에서 찾아보기 힘들것이다.

I visited the Ontario Food Terminal very early in the morning, arriving at 2:30 AM on a Thursday, which is when both the flower market and the farmers’ market are in full swing, alongside the produce section. I had never before experienced such a dynamic atmosphere—the market was bustling with activity as people hurriedly bought and sold, inspecting the freshness and prices of nearly every type of vegetable and fruit imaginable. The energy was palpable, with workers deftly maneuvering electric pallet jacks, unloading produce from containers and swiftly loading it onto buyers' trucks.

The hustle and bustle of the early morning crowd, working tirelessly before the sun had even risen, filled the air with an infectious energy. It was a hive of activity, and watching the dedication and efficiency of everyone involved gave me a real boost of energy as well. The sheer scale of the operation, running like a well-oiled machine, left a strong impression on me. From 2:30 AM to 8:00 AM, my colleague and I gathered the freshest produce amidst this whirlwind of motion and life, feeling fully immersed in the pulse of the market.

The market seemed like a world of its own in those early hours—a place where time moves differently, and everyone is driven by a shared goal of keeping the city’s food supply flowing. There was a rawness and vitality to the experience that makes it unforgettable.

이곳 청과 터미널의 작은 레스토랑 및 카페는 새벽 네시에 연다. 첫날 아침으로 Bacon & Sunny-side-Up Eggs, White Toast, Fried diced Potato의 전형적 아침식사를 진한 블랙커피와 함께 했다.
