16. 만두, 베이징덕(카오야)
饺子 [jiǎo zi]
Dumplings are a staple in Chinese cuisine, In Beijing Jiaozi are a big crowd-pleaser. Jiaozi are crescent-shaped and can be prepared different ways :
만두는 중국 요리에서 주식에 해당한다. 베이징 만두(지아오쯔)는 우리를 매우 즐겁게 해주는데, 초승달 모양을 갖추며 다양한 방식으로 요리된다.
水饺 [shui jiǎo] boiled dumplings
쉐지아오(물만두)
蒸饺 [zhēn gjiǎo] steamed dumplings
증지아오(찐만두)
锅贴 [guō tiē] or 煎饺 [jiān jiǎo] fried dumplings

Fried dumplings also come in a shape that's open on both ends to allow it to be cooked all the way through.
군만두는 양쪽 끝이 열려있어서 속까지 골고루 익게 해주는 모양새를 갖추기도 한다.
Using a mixture of flour and waler, it is fun to make a crispy skirt for fried dumplings, which creates a pretty lace-like layer around the jiaozi and adds a tasty crunch.
밀가루와 물을 섞어서 부으면 군만두 주변에 예쁜 레이스가 둘러지면서 바삭한 식감이 더해져서 흥미로워집니다.

베이징덕이 날 울린 까닭
When I was a student in Shenyang, a big city in the north, my mother and grandmother visited me in China and together we traveled to Beijing.
내가 중국 북부의 대도시 션양에서 중국어 공부할 때, 엄마와 할머니가 날 방문해서 우리는 다같이 베이징으로 여행을 왔었다.
My grandmother was very enthusiastic and kept asking me all kinds of questions I didn't know the answer to. There was no end to it and ten days of silly questions like that would drive anyone mad. (What is this tree called? How old is he? What is the name of this bird?)
할머니는 매우 열정적이셨는데, 내가 답할 수 없는 수만가지 질문을 하셨다. 누구라도 화나게 할 만한 우스꽝스러운 질문들을 열흘 동안 끝도 없이 쏟아내셨다. (이 나무 뭐라고 부르니? 저 사람 몇 살이니? 이 새 이름은 뭐니?)
After visiting the Great Wall, they wanted to try the famous Beijing Roast Duck. (How many bricks were used in this tower?)
만리장성을 방문한 후에 두 분은 유명한 베이징덕(북경오리)을 맛보고 싶어하셨다. (이 탑에 벽돌 몇 개가 들었을까?)
Not familiar with Beijing Duck and too fatigued to research, I requested the taxi driver to bring us to a Beijing Duck restaurant.
베이징덕에 문외한인데다가 검색에도 지쳤기 때문에, 나는 택시기사에게 우리를 베이징덕 식당에 데려다달라고 부탁했다.
He dropped us off at a famous Beijing Duck restaurant, one of the best and well known in Beijing.
기사는 베이징에서 잘 알려진 유명한 식당에 우리를 내려주었다.
When ordering the dish, the staff brings out the whole duck and starts carving it in front of the customers.
요리를 주문하자, 직원이 오리 한 마리를 가져와서 손님 앞에서 해체해주었다.
Serious skills are required to do this job, since each piece must have a meaty part as well as crispy skin. One duck can yield 100 to 150 pieces.
이 작업에는 만만찮은 기술이 필요한데, 각 조각들은 바삭한 껍질과 고기 부분이 모두 포함되어야 했다. 오리 한 마리에 보통 100~150 조각이 나온다.
The meat is served with fermented bean sauce, thin pancakes, cucumber shreds and spring onions.
발효콩소스, 얇은 전병, 오이채, 파채가 고기와 함께 제공된다.
How to EAT :
Take one thin pancake
Dip meat in the sauce
Place cucumber and onions on top
Roll it up and enjoy
먹는 법 :
전병을 펼친다.
고기를 소스에 찍는다.
오이와 파를 놓는다.
돌돌말아 먹는다.
After the duck carving presentation, the rest of the duck with still plenty of meat left, was taken away.
오리 해체 후에도 남은 부분에 고기가 많이 붙어있었는데, 종업원이 가져가버렸다.
I had to ask the waiter :
Where does the rest of the duck go?
We will make a duck bone soup which will be served later.
나는 종업원에게 물어보았다. 남은 오리 어떻게 했어요? 오리뼈탕을 만들어서 곧 갖다드립니다.
When the soup was served, my mother and grandmother noticed just a bit of bones and tiny bits of spring onions in the huge bowl of soup.
탕이 나왔고, 엄마와 할머니는 큰 그릇에 뼈 몇 조각과 파 조금만 둥둥 떠있는 것을 보셨다.
Ask what happened to the duck meat!
Will they bring out another soup?
This is a scam!
Is this how they run their business?
오리 고기 어떻게 된거니? 저 사람들 다른 탕을 또 가져올거지? 이거 사기야! 이 사람들 이렇게 돈 버는거야?
They were convinced this was a scam, urged me to complain and start a fight with the staff.
두 분은 이게 사기라고 굳게 믿었고, 나에게 어서 따지라고 부추겼다.
I was so tired and this situation was the last drop, so I burnt out crying uncontrollably.
나는 너무 피곤했고 더 이상 참을 수가 없어서, 결국 걷잡을 수 없이 울음을 터뜨리고 말았다.
Confused restaurant staff and patrons helped me calm down.
혼란스러운 종업원들과 손님들이 날 달래주었다 (…는 웃픈 이야기)
