拉面 [lā miàn] Hand-pulled noodles
Restaurants make use of huge windows where chefs show off their skills by pulling the fresh noodles to attract crowds of hungry customers.
라미엔/라면. 손으로 뽑은 국수. 식당들은 큰 창문을 통해 요리사가 직접 신선한 국수를 현장에서 뽑는 것을 보여주며 배고픈 손님들을 유혹합니다.
炸酱面 [zhà jiàng miàn] Fried sauce noodles
A Beijing must try. Wheat noodles topped with richly flavored fried bean sauce, sometimes mixed with meat and topped with veggies.
쟈장미엔/작장면. 볶은 소스 국수. 베이징에서 꼭 먹어봐야 할 음식. 밀가루 국수 위에 진한 볶은 춘장을 올리고, 고기, 야채 등과 비벼서 먹는다.
刀削面 [dāo xiāo miàn] Knife-cut noodles
These call for using a razor sharp knife to quickly and continuously shave into a block of dough on a wooden plank, so that strands of textured noodles fall directly into the boiling water. This noodle-making technique can take a very long time to master.
다오샤오미엔/도삭면. 칼로 자른 국수. 도삭면은 나무 도마 위에 반죽을 올리고서 날카로운 면도날로 재빠르게 끊기지 않게 잘라내는 방식에서 이름이 유래했는데, 잘라진 면 가닥들은 끓는 물로 곧바로 투하된다.
[biáng biáng miàn] Biang Biang Noodles
The broad noodles owe their name to the sound of dough being slapped on the table in the creation process.
뺭뺭면. 만드는 과장에서 조리대 위에 반죽을 탕탕 내리치는 소리가 나서 유래된 이름이다.
The character for Biang needs 42 strokes and is one of the most complicated characters in the Chinese language.
‘뺭’ 글자는 42획이나 되는 가장 복잡한 한자 중 하나이다.
猫耳朵面 [māo ěrduo miàn] Cat's ear noodles
This pasta resembles fluffy cat ears. I love the cute name.
먀오얼두어미엔/고양이귀면. 보송한 고양이 귀 모양을 닮은 국수인데, 나는 이 귀여운 이름을 좋아한다.
方便面 [fāng biàn miàn]
方便 convenient + 面 noodles = instant noodles
편리하다 + 국수 = 인스턴트 누들 (우리가 아는 라면)

长寿面 [cháng shòu miàn] Longevity noodles
A special kind of noodles traditionally served on birthdays. Eat this long noodle without breaking the strand to symbolize your long life. Nowadays, birthday wishes are imprinted on the noodles for extra symbolic appeal.
창쇼우미엔/장수면. 전통적으로 생일날 대접받는 특별한 국수. 긴 국수 가닥을 끊지 않고 먹는 것은 장수를 상징한다. 요즘에는 이러한 장수에 대한 상징성을 더욱 강조하기 위해 생일 소원을 국수 위에 인쇄하기도 한다.
老干妈 [lǎo gàn mā] Laoganma - Old grandmother

라오간마. 국수 회사에서 만든 매콤한 소스인데, 회사는 억만장자가 되었다. 프로레슬러 존 시나는 매일 브로콜리에 이 소스를 뿌리라고 외친다.
