혼자 지내시는 큰 아주버님께 드린 명절 음식, 장조림과 불지 않는 잡채


명절이 끝나면 늘 마음에 남는 분이 계십니다.
부산·김해·진주 근처에 사는 삼형제의 정겨운 모임 ‘묵자계’.
해마다 명절이 지나면 혼자 지내시는 큰 아주버님을 찾아뵙곤 해요.
이번에도 장조림과 잡채를 직접 만들어 정성껏 챙겨 다녀왔답니다.

1. 압력솥 장조림 레시피 (Soy-Braised Beef in Pressure Cooker)




재료 (Ingredients)
쇠고기 300g(beef 300g), 꽈리고추 10개(chili peppers 10),
마늘 10개(garlic 10 cloves), 파인애플조각 6개(pineapple 6 pieces),
진간장 3숟가락(soy sauce 3 tbsp), 멸치액젓 1숟가락( 1 tablespoon anchovy fish sauce)
알룰로스 3숟가락(allulose 3 tbsp), 육수 2컵(broth 2 cups)

1️⃣ 물 3컵에 쇠고기와 파인애플 3조각을 넣어준다.
 → Put beef and 3 pineapple pieces in 3 cups of water.
2️⃣ 압력솥에 치카치카 10분, 압력을 빼지 않고 10분 둔다.
 → Cook 10 minutes under pressure, then rest 10 minutes.

 → Slice chili peppers and garlic.

4️⃣ 익은 쇠고기와 파인애플을 꺼내 먹기 좋게 썬다.
 → Slice cooked beef and pineapple.

→ 나머지 파인애플도 썰어준다.
→ Slice the remaining pineapple as well.


5️⃣ 삶은 물 2컵, 간장, 멸치액젓, 알룰로스, 고기, 마늘, 파인애플 넣고 졸인다.
 Add 2 cups of boiled broth, soy sauce, anchovy fish sauce, allulose, beef, garlic, and pineapple, then simmer until reduced.
6️⃣ 마늘이 익으면 꽈리고추를 넣는다.
 → Add chili peppers when garlic softens.
7️⃣ 국물이 자작해지면 통깨를 뿌려 마무리한다.
 → Sprinkle sesame seeds to finish.




2. 불지 않는 잡채 레시피(Non-Sticky Japchae)

재료 (Ingredients)

당면 100g(glass noodles 100g, soy sauce 3 tbsp, oil 2 tbsp),
어묵 100g(fish cake 100g), 표고버섯 1개(shiitake mushrooms 1),
양파 1/2개(onion 1/2), 당근 1/3개(carrot 1/3),
실파·부추 약간(green onion & chives), 굴소스 2숟가락(oyster sauce 2 tbsp),
당면 삶은 물 1컵(noodle water 1 cup), 참기름, 깨소금, 마늘, 소금, 후추, 식용유 약간

1️⃣ 물 3컵, 식용유, 간장을 넣고 끓으면 당면을 넣고 8분 삶는다.
 → Boil 3 cups water with oil & soy sauce, cook noodles 8 min.
2️⃣ 삶은 당면은 건져둔다.
 → Drain noodles and set aside.

3️⃣ 어묵, 버섯, 양파, 당근, 실파, 부추, 돼지고기 채 썰어 준비한다.
 → Slice fish cake, veggies, pork.
4️⃣ 돼지고기는 소금, 후추, 마늘로 밑간한다.
 → Season pork with salt, pepper, garlic.

5️⃣ 팬에 식용유 두르고 고기를 볶는다.
 → Stir-fry pork with oil.
6️⃣ 고기 익으면 어묵과 채소 넣고 볶는다.
 → Add fish cake and veggies.
7️⃣ 소금으로 간하고 덜어둔다.
 → Season and remove.

8️⃣ 팬에 당면 삶은 물과 굴소스를 넣고 끓인다.
 → Boil noodle water and oyster sauce.
9️⃣ 당면을 넣고 졸인다.
 → Add noodles and reduce.
� 실파, 부추, 볶은 채소, 참기름, 깨소금, 후추 넣고 섞는다.
 → Add greens, sesame oil, seeds, pepper, mix well.
